Quick Garden Recipes

Today's harvest from the garden was a few tomatoes, a Summer squash, dill, parsley, spinach, and yesterday I was given a lemon cucumber.  I came up with a few quick and easy recipes.  Each of these recipes is simple and requires little effort. I'm on a low salt diet so salt is always limited. You can easily adjust the salt to your taste.  Feel free to add your own touch by adding other spices and/or herbs.  Enjoy!!

Zucchini with Mint





Zucchini with Mint

1 zucchini, cut in 1 inch pieces
to taste salt & freshly ground pepper
5 mint leaves, roughly chopped

1. Add 2 cups of water to a pot. Bring to a boil.
Once it boils add 1/2 teaspoon of salt.
2. Add the zucchini. Cook for about 5 minutes.
3. Drain and let cool. (You can also serve them warm.)
4. Season with black pepper and mint. Serve.


Tomato and Lemon Cucumber Salad
Tomato and Lemon Cucumber Salad

3 small tomatoes, sliced in wedges
1 lemon cucumber, sliced in wedges
1 tablespoon Aged Balsamic Vinegar
1 teaspoon extra virgin olive oil
dill
parsley
salt and pepper

1. Arrange the tomatoes and lemon cucumber on a plate.
2. Drizzle with the aged balsamic and extra virgin olive oil.
3. Season with salt and pepper.
4. Garnish with dill and parsley. You can substitute with basil.


Spinach with Sesame Dressing
Spinach with Sesame Dressing

2 bunches of spinach (that's about how much I picked)
1/2 teaspoon salt
2 tablespoons Toasted Sesame Dressing

1. Bring 3 cups of water to a boil. Add the salt.
2. Add the spinach and cook for about 3 minutes.
3. Drain and cool. (You may need to squeeze any excess water.)
4. In a bowl add the spinach and toss with the dressing. Serve and enjoy. Can be served warm or room temperature.
